Resep Siobak Babi Panggang - Jajanuel Surabaya

Selama ini ngebayangin masak SIOBAK itu susah dan ribet banget, bikin males masak sendiri. Padahal beberapa tahun lalu pernah ikutan kursus bikin Siobak (babi panggang) dan Jasio (Babi Merah Manis), tapi belom pernah nyoba bikin lagi dirumah..🙈

Ingredients
  

  • 1,3 kg daging babi bagian perut
  • Bumbu A:

Bumbu A

  • 4 siung bawang putih haluskan
  • 1 sdm garam
  • 1 sdt Ngohiong bubuk
  • 1/2 sdm angciu

Bumbu B

  • 1 sdm Cuka masak
  • 100 gr garam

Instructions
 

  • Campur bumbu A, aduk hingga rata
    4 siung bawang putih, 1 sdm garam, 1 sdt Ngohiong bubuk, 1/2 sdm angciu
  • Didihkan air, masukkan daging, rebus kurang lebih 5menit, tiriskan.
  • Tusuk2 bagian kulit dengan garpu (pastikan tidak ada bagian yang terlewat)
    1,3 kg daging babi bagian perut
    Dua potong sancam daging babi bagian perut
  • Balik daging, lap bagian daging menggunakan tisu hingga kering. Balur dengan bumbu A hingga rata.
    Bumbu A:
  • Letakkan di rak kawat, bagian kulit di atas, oles bagian kulit dengan cuka hingga rata, beri garam.
    1 sdm Cuka masak, 100 gr garam
    Membalur kulit siobak babi panggang dengan garam
  • Oven daging kurang lebih 50menit.
    Memanggang siobak babi panggang dengan baluran garam
  • Lepas lapisan garam. Lanjutkan oven selama kurang lebih 60-90menit. Biarkan sampe terbentuk lapisan kriukk, lalu sesekali boleh dibalik supaya matang merata. Saya suhu 170°C api atas bawah, sesuikan oven masing2 saja, krn beda oven beda penanganan.

  • Setelah dioven, siram kulit babi dengan minyak panas hingga berubah warna dan mengembang (meletup-letup) hingga rata.
